As a brewery incubator in the craft beer hotbed of Logan Square, Chicago, our approach to brewing industry-defining products happens by fostering relentless experimentation of new brewing recipes, breweries, collaborations, styles, and concepts. Our mission for every guest walking into Pilot Project’s tasting room is to experience the thoughtfulness we put into our products by way of expert knowledge, an attention to detail, and impeccable customer service.

We accomplish this by hiring spirited and dedicated individuals that embody the Pilot Project high standards and demonstrate expert knowledge of the brewing process, our craft beers, cuisine, and fellow breweries.   • Point of contact brewing and cellaring side of incubator business across house and client brands

  • Collaborate on recipe creation, coordination and development

  • Help with ordering of materials and inventory

  • Maintain operating procedures for each phase of concepting, brewing, fermentation, and kegging

  • Operate brewhouse and produce batches from start to finish

  • Manage CIP cleaning of brewing and fermentation tanks, and other equipment

  • Maintain log of all brewing related notes from brew day through fermentation and assisting with finishing and packaging

  • Maintaining clean brewing practices in the brewhouse and cellar

  • Ensure proper preventative maintenance on brewhouse and cellar equipment, as well as the taproom

  • Willingness to help out with other tasks including taproom support, receiving, cleaning and other business-related details associated with lean start-up businesses

  • Build and maintain productive relationships with brewery partners


  • Expert project manager and ability to manage multiple projects at once

  • Willingness to work long hours and flexibility between days, evenings, nights and weekends

  • 6+ years of professional brewing experience

  • Mechanical experience and aptitude required

  • An expert understanding of all aspects of brewing not limited to cellaring, yeast handling, CIP, and sanitization

  • An understanding of quality assurance (QA) methods and procedures

  • Familiar with laboratory operations and basic knowledge of biology/chemistry is preferred

  • Excellent communication, time management, problem-solving and organizational skills

  • Natural leadership required with the ability to perform tasks with minimal supervision

  • Must be sociable, willing and comfortable to represent the brewery at events and in public

  • Knowledge of local Chicago breweries

  • Ability to lift 60 lbs, move and exchange kegs

  • Must be a team player
